Hsiao-Ching emailed me that many of your readers wrote you that they don't know how to season a wok. So interesting how the old traditions are dying in the modern kitchen. Just wondering how you like to season a wok for home use.

Dear Grace:
My readers are a limited group but very interesting.
All of them write well in Chinese and well educated.
This means they were forced out of mom's kitchen to study, study, study to get a good education and higher degrees.
They eventually settled down in some foreign countries. And when they had to cook for their husband and children they usually pick up whatever is convenient and available.
The women in Taiwan are so lucky because there are good food available in every corner of the street and also in mom's home.
They really don't know a wok has to be seasoned. Hehehe!
Good news is their daughters are reading your books!
They begged me to post the video so they could learn how to season a wok.
For me, I have a similar story. (I always get hand-me-down well seasoned cookwares from my mom, my mother-in-law or students who graduated and left school.)
I used 拋鍋 on a gas stove in our old house. And now, I use Hsiao-ching's wok.
And I learned how to season a wok from your book.

一直以為開鍋是理所當然 用鍋的第一件事
尤其像燉鍋陶鍋 更是馬虎不得....
我記得新菜板也要"開板"抹油, 把板面充分保護之後才開始開板

許多年輕家庭鍋子幾乎成了裝飾品

去年買了兩個鍋子 … 因為不知道是不沾鍋還是不銹鋼鍋哪個好,就各買一個。
兩個鍋子的包裝上都有開鍋說明:跟楊女士的展示有點像,只是沒說要加入蔥薑來炒,原來他們是學楊老師的

姐姐的觀察深入, 還真是這樣. 我們顧著讀書,上學之後在家裡 除了煮開水 , 不需要下廚. 成為妻子之後才開始 學著執鍋鏟.
新鍋的開鍋, 媽媽只說是起油鍋, 把油倒掉, 加上蔥薑韭 這些中國人常用的香菜, 應該是更合鍋味.
現在不一樣了﹐尤其在美國﹐小男生也上家政課﹐學縫紉及廚藝
電視節目最吸引人的還是那些大廚師
自從電影“料理鼠王”發行以來﹐連幼兒都想在廚房裡混…

老闆也有教我開鍋
但我從前回香港時買瓦鍋回台灣
我婆婆也有告訴我過
但是從沒想到鐵鍋 不銹鋼鍋也是這樣開鍋
到你的部落格真的學到很多
也有很多溫暖的 也有知性的
真的太好了
