Babylon Whelk Curry
Ingredents:
- Babylon whelks --> 1200g
- Curry paste --> 2 tbsp
- Sliced --> 1 shallot
Thickenings:
- Cornstarch --> 1 tsp
- Water --> 4 thsp
Seasonings:
- Soy souce --> 1 tsp
- Oyster sauce --> 1 thsp
- Salt --> 1/4 tsp
- Water --> 1/2 cup (125g)
Method:
- Wash the Babylon whelks. Bring some water to a boil. Add the Babylon whelks and blanch over high heat for 10 minutes. Drain well.
- Shell the Babylon whelks.
- Heat some oil in wok. Saute the dried scallion and curry paste. Then add the Babylon whelks and sautes throughly.
- Add the seasonings and cook until the sauce has reduced to about 1/4 cup. Add the thickenings and stir well.
