Babylon Whelk Curry

Ingredents:

  • Babylon whelks --> 1200g
  • Curry paste --> 2 tbsp
  • Sliced --> 1 shallot

Thickenings:

  • Cornstarch --> 1 tsp
  • Water --> 4 thsp

Seasonings:

  • Soy souce --> 1 tsp
  • Oyster sauce --> 1 thsp
  • Salt --> 1/4 tsp
  • Water --> 1/2 cup (125g)

Method:

  1. Wash the Babylon whelks. Bring some water to a boil. Add the Babylon whelks and blanch over high heat for 10 minutes. Drain well.
  2. Shell the Babylon whelks.
  3. Heat some oil in wok. Saute the dried scallion and curry paste. Then add the Babylon whelks and sautes throughly.
  4. Add the seasonings and cook until the sauce has reduced to about 1/4 cup. Add the thickenings and stir well.
