4T... extra-virgin olive oil
2 cloves... garlic, minced

1t... dried oregano
1/2t... pepper

1- Put potatoes in a large pot of boiling salted water, cover
and cook about 15 minutes. Drain and let cool. Peel off skins and cut the potatoes into wedges.
2- In large bowl, whisk together lemon juice, oil, garlic, salt, oregano and pepper; add potatoes and toss gently to coat. (Make-ahead: Cover and refrigerate for up to 4 hours.)
3- Arrange potatoes on a large baking sheet. Roast in preheated 400°F (200°C) oven about 40 minutes or until the wedges are crisp and golden; turning once between roasting.
