中秋節已經過一個星期了，
假日還是有看到很多人家，
在院子或店舖前面烤肉，
既然這樣我們就來談談烤肉必備的木炭。
在日本非常高級的炭叫「備長炭」，
因為在製作的最後過程中，
是將赤熱的炭取出窯外，
再以消火粉讓炭慢慢降溫，
而消火粉的粉末就是造成備長炭表面，
泛著銀白灰色的由來，
因此備長炭又被稱作「白炭」。
備長炭這個名稱的由來，
有一說是木炭商人，
另一說是製造木炭之人，
不論如何，就是一位叫做
「備中屋長 左衛門」的人，
因為販賣這種炭
大受烤鰻魚店等料理店的青睞，
因此取其姓名而來的。
一般人對備長炭最大的印象，
就是火力強而持久。
那是因為，製造過程是
以超過1000度以上極高的溫度燒成的。
所以原本蘊藏在木頭裡的油質及瓦斯等，
可燃物質的含量可以減到最小，
因此燃燒時間可以維持很長。
除此之外，不會冒火或出煙的特性，
可以讓食物在燒烤過程中，
不會附上煙燻怪味，
食物也比較不會燒焦，
因此日本的烤鰻魚店或串燒店等，
特別喜歡使用備長炭來燒烤食物。
不過相反的，如果是一般烤肉，
要透過煙燻香味來增加美味和食慾的話，
就適合用一般的黑炭了。
黑炭之所以為黑色，
是因為最後製程是在窯內消火，
阻隔空氣直到窯內溫度下降為止，
所以表面會呈現黑色就稱為黑炭。
