咖啡豆與咖啡樹

咖啡樹的分類很複雜,有許多種類多樣性與系品種。其中最具代表性、最商業實用性的阿拉比卡咖啡 (coffee. arabica) ,及另一種以其產量最著名的羅巴斯達(robusta) 為主要兩大品種。雖許多人致力於研究咖啡樹的混種,以提高咖啡的產量及抗病力,然而,混種的味道就是比不上純種的味道。果實含有膠質,採收後送入脫肉機,脫去果皮果肉,再發酵脫除膠質,僅存種子稱咖啡豆。再用脫殼機脫除種子果殼,並經磨光機磨去銀膜,並磨光豆面,再焙炒研末,既成精製咖啡。

筆者曾經造訪沙烏地阿拉伯及阿拉猶酋長國,參加專業學術討論會,有幸品嚐所謂的阿拉伯咖啡式咖啡美味,配合食用椰棗,令人人回味無窮.

 Arabic Coffee.

Arabic coffee refers to a sumptuously flavored version of coffee brewed from Arabica coffee beans that is one of the two prominent species of coffee beans, another being Robusta. Meticulously cultivated at an altitude ranging from 1,200 meters to 1,500 meters, Arabica coffee accounts for about 80% of the world’s coffee bean manufacture and is considered exceptional for its superior taste and quality. In most Arab countries across the Middle East, serving coffee is an important part of their warm hospitality and tradition. In fact, they have developed their own unique way of brewing and preparing the coffee.

History Believed to have been originated in Ethiopia, coffee has a long history dating back to the 9th century. The coffee’s origin is largely attributed to Kaldi – a goat herder, who first noticed the increased level of goats’ energy upon chewing certain berries. Based on the information from Kaldi, the local monastery’s Abbot did some experiment using these berries, which eventually turned out to be an energizing drink. It made its way to Middle Eastern and Northern African regions during the 15th century, and later on, it traveled to Italy and other European regions as well as to the Americas. Today, coffee is widely consumed across the world and is especially lauded for its rich taste and tempting flavor.

原產地咖啡原產熱帶非洲,早在西元 575 年,阿拉伯西南部的葉門人就開始使用,西歐開始飲用約在 1615 年。世界咖啡的供應大部份來自巴西,其次是哥倫比亞。南回歸線與北回歸線間及赤道附近的熱帶地區,亦所謂的世界咖啡生長帶。

 

未成熟咖啡果實為綠色,經過 6~7 個月的成熟期後,成熟的果實外皮呈紅色,由於其形狀與顏色與櫻桃相似,因此,外國人稱成熟咖啡果實為櫻桃 (Cherry) ,在鮮紅的外果皮下,是果皮一種甜甜的黏黃物質包住整個咖啡豆。正常情況下每顆果實有兩粒咖啡豆,扁平面相對,咖啡豆的表面有一層非常薄的隔膜組織─銀皮 (Silver Skin),每粒咖啡豆與其銀皮皆位於有防護作用的堅硬乳色豆形殼裹,叫內果皮(Parchment),作用是把咖啡豆和黏液分開。

正常的咖啡樹有時會長出一些較小的果實,裡面只有一粒咖啡豆,這種單粒咖啡豆有不同的名稱,叫圓豆(Peaberry)、單豆或寶拉( Perla),它不會有扁平的一面,相反的,它的體型較小,且幾乎成圓形。由於其量非常的少,且必須特別的挑選、蒐集在一起,因此,它的價格比平常的咖啡豆高出很多,很多人覺得圓豆的味道特別好,是因其圓形的豆形能將咖啡的原味,緊包密於豆中,味道特為濃烈。許多咖啡喜愛者,視它為咖啡豆中的極品。

Coffee Arabian Coffea Arabica Nana is a compact, evergreen, subtropical perennial bush. Coffee Arabian seeds can be started indoors, and Coffea Arabica Nana is a dwarf variety that grows only 12 inches tall and features attractive foliage with dark green, glossy leaves producing jasmine-scented, white flowers in spring. This Coffee plant produces coffee beans that are green at first, but they turn dark red over an eight month period.

咖啡屬學名Coffea)是龍膽目茜草科的一屬,原產於非洲,有許多變種。每一變種都同特定的氣候條件和海拔高度有關。野生咖啡樹是常綠灌木,高3米至3.5米,分支上有白色小花,具有茉莉花的香味。果實長1.5至1.8厘米,紅色,內有相鄰排列的兩粒種子,每粒種子外均包有內果皮和表膜。

The seeds of some species, called coffee beans, are used to flavor various beverages and products. The fruits, like the seeds, contain a large amount of caffeine, and have a distinct sweet taste and are often juiced. The plant ranks as one of the worlds most valuable and widely traded commodity crops and is an important export product of several countries, including those in Central and South America, the Caribbean and Africa.
