Apple Crumble Cheesecake

Ingredients:

Apple & Cheese Filling:

  • 1 apple
  • 1-2tbsp butter
  • 227g softened cream cheese
  • 58g sugar
  • 2 eggs
Crumble:
  • 60g plain flour
  • 33g sugar
  • 33g soften butter
  • 1/8tsp cinnamon powder
  • 1/8tsp baking powder
Cake Base:
  • 70g digestive biscuit
  • 28g soften butter

Method:

Prepare a 6-inch round wrapped cake ring & grease it.


Cake Base:
  1. Crush digestive biscuits to fine powder.
  2. Combine with butter & rub it.
  3. Use a tablespoon or potato masher to spread. 
  4. Press the biscuit mixture over the base. Set aside.
Crumble:
  1. Combine all ingredients in a mixing bowl & rub it.
  2. Stop rubbing until it turns sandy.
  3. Put in the refrigerator.
Apple & Cheese Filling:
  1. Dice the peeled & cored apple.
  2. Fry with butter.
  3. Set aside to cool.
  4. Separate egg yolks & egg white.
  5. Stir egg yolks & cream cheese until smooth.
  6. Beat egg white & sugar until peak form.
  7. Pour the meringue into the cheese mixture in three separate times.
  8. Add the cooked apples & mix it well.
  9. Pour into the cake ring.

Sprinkle the crumbke evenly on top.

Put in the 170℃ preheated oven & bake for 40 mins.
