When preparing this dish, opt for canned artichokes—their soft texture makes them ideal for this bubbling, cheesy dip. In a time crunch?  days in the fridge, then bake when you're ready.

Ingredients
1 package reduced-fat cream cheese
0.50 c. lowfat sour cream
0.25 c. grated Parmesan (1 oz)
3 tbsp. fresh lemon juice
1 clove garlic
Kosher salt and pepper
1 can artichoke hearts
1 package frozen leaf spinach
4 oz. extra-sharp Cheddar
Pita or tortilla chips
Directions
Heat oven to 425°F. In a large bowl, whisk together the cream cheese, sour cream, Parmesan, lemon juice, garlic, 1/4 tsp salt and 1/2 tsp pepper.
Add the artichokes, spinach and Cheddar to the bowl and mix to combine.
Transfer the artichoke mixture to a shallow 1-qt baking dish and bake until bubbling and light golden brown, 20 to 25 minutes. Serve with chips, if desired.
